Chocolate Lava Cake

Serves 4

4, 3″ cake molds, buttered and floured, tapped clean and floured and buttered again.
1 cup butter
1 tsp cinnamon
9 oz bittersweet chocolate
1/2 oz flour
4 egg yolks
4 eggs
4 oz sugar

1 pint whole milk
4 oz sugar
7 egg yolks
1 vanilla bean (split and seeded)

Melt butter and chocolate in double boiler.

Whip yolks and sugar until they triple in volume. Add the cooled melted chocolate and butter mixture to the yolk sand sugar mixture. Slowly add the flour and the cinnamon. Place in the prepared molds and bake at 400 degrees for 7 minutes. Remove the cakes from the oven and turn onto a plate. Pour vanilla sauce around and serve.

Whip egg yolks and sugar until they reach a “whitened” state. Boil milk with vanilla bean. Pour scalded milk slowly into egg yolk mixture. Incorporate and return to the stove and cook until the cream coats the back of a spoon. Do not boil or the eggs will solidify. Strain and chill immediately.
