Four Cheese Grilled Cheese

8 slices of sourdough bread
8 slices of American cheese
1/2 cup grated mozzarella
1/2 cup grated provolone
1/2 cup grated fontina
1 cup clarified butter

Lay 4 slices of bread on a clean surface. Place the slices of American cheese on each of the 4 slices of bread. Add the remaining cheese to each slice. Lightly season with salt. Place the other 4 slices of bread on top of the other 4 slices of bread.

Place a large skillet over medium heat. Add 1/3 cup of clarified butter to the pan. When the butter turns hot, add the cheese sandwiches to the pan and lightly brown. Add the remaining butter to the pan if the pan “dries out.” Turn the sandwiches over and continue to cook until both sides of the sandwich are nicely browned and the cheese has begun to melt. Remove from the heat and slice in half. Serve with dill pickles and fries.
